These updates are based on classic coffee principles, real-world brewing feedback, and a desire to give you the best shot at delicious, balanced cups every time. Here's what's new and why it matters.
Updated Grind Guide for Bay Beans
- Whole Beans
Leave them whole for maximum freshness. Grind just before brewing using a good burr grinder for consistent particle size and peak flavor.
- Ground Fine — Home Espresso, Aeropress, Stovetop
We've moved **Aeropress** into this finer category (previously coarser in some guides). A fine grind (similar to table salt) delivers rich body and quick, even extraction—perfect for home espresso machines, the AeroPress's signature concentrated brews, and stovetop/Moka pots.
- Ground Extra Fine — Cafe Espresso Machine, Turkish
Powdery texture (almost flour-like) for high-pressure commercial espresso machines and traditional Turkish ibrik/cezve brewing. This ensures thick crema and full flavor without channeling or under-extraction.
- Ground Medium — Drip Filter, Pour-Over, Siphon, Plunger
We've shifted the classic "medium-coarse" methods here to a true medium grind (like coarse sand). This category now covers most everyday filter brewing: drip machines, V60/Kalita/Hario pour-overs, siphon/vacuum pots, and French Press/plunger. It strikes a great balance—enough contact time for flavor development without excessive bitterness or sediment.
- Ground Coarse — Cold Brew
Explicitly added as our coarsest option (like large sea salt or breadcrumbs). The larger particles allow slow, gentle extraction over 12–24 hours, producing smooth, low-acidity cold brew without over-extracting bitter compounds.
