A GROWING demand for quality coffee combined with a love of the beverage has seen Corlette residents James and Angela Axisa start up their own business specialising in the product.

The couple recently launched Bay Beans in Port Stephens, offering a variety of blends on their website www.baybeans.com.au

According to Mr Axisa, Bay Beans is unique in that its beans, which are predominantly sourced from New Guinea, are roasted to order.

“By the time you buy even the quality stuff on the shelf at the supermarket it is almost 12 months old,” he said.

“With us we will roast it and grind it if you want us to, when you want us to, so it is completely fresh.”

The company, which offers Brazilian, Columbian, Kenyan blends among others, has been steadily growing since its website launch and Mr Axisa said it was only a matter of time before the company had a shop front.

“To have a shop is one of our major goals,” he said. “But we’re also selling at the Anna Bay Markets and the new markets at Murray’s Brewery as well as delivering to homes.”

Its official. 11am has been proven to be the ideal time for a coffee break. This is according to a team of experts at Oxford University. 

Professor Spence even created a complex formula, determining 11AM was the best time to drink you coffee, in a well lit room, with friends and your vocal music with a low raspy voice playing in the background. 

Professor Spence said: 'The formula describes how to create the perfect coffee moment at home or at work. We have known for some time that our taste buds are a vital part of the taste experience. 'However, we can now pinpoint the exact sensory conditions required to enjoy coffee, or any other food and drink.'

Kevin Gould, Food Futurologist says: 'Professor Spence's research report proves the importance of all the senses in the enjoyment of food and drink. Aroma is a vital ingredient to make the most of your coffee break.'

For a better coffee, warm your cup up first.

Another secret to a more enjoyable coffee is to prewarm your coffee cup. Coffee that is served in in cups that have not been pre-warmed produces a coffee with a different taste. This becomes ever so much more important for espresso shots. A cold cup from the cupboard will rob your coffee of 10degrees C, making you coffee cool faster. If you then go and add cold milk, a cold spoon for sugar that is also cold, you could loose another 10c - not so delicious?
A prewarmed cup will enhance the aroma, well, it at least wont inhibit the aroma or rob your coffee experience of the intense fragrance available. 

A warm cup will retain the crema longer as well. 

Porcelain cups can be prewarmed easily by filling with hot water while you are preparing everything else, or with a shot of steam.
